          <datacite:description xml:lang="en" descriptionType="Abstract">The present investigation was attempted to obtain effective natural antioxidants for food. In the first experiment, antioxidative effect of extract from 25 kinds of herbs with 80% ethanol was examined by determining the peroxide value of mackerel fatty acid as substrate. In respect to eight kinds of herbs that showed strong effect among the 80% alcoholic extract, the antioxidative effect of water extract was also examined in the same way. In the 2 nd experiment, the 80% alcoholic extract of onion, ginger, sage and rosemary were divided into fat and water soluble fraction by using hexane and water. The concentrated specimen of each part was added to the mackerel fatty acid at the level of 1~0.02%, and their antioxidative effect were examined in the same way. The results are as follows ; 1) In the 80% alcoholic extract from welsh onion and onion, antioxidative effect was found at early period of storage. On the other hand, rosemary, sage and ginger showed a durable antioxidative effect throughout storage. Marjoram, laurel, garlic and oregano showed the effect to some extent. On the contrary, leaf of carrot, parsley, leaf of fennel etc, accelerated the oxidation of fatty acid. 2) In the water extract, only ginger showed the antioxidative effect. 3) When the concentrated specimen was added at level of 1 %, all samples showed the antioxidative effect except fat soluble fraction of onion. But, no sample showed the effect at all at 0.02%.</datacite:description>
          <datacite:description xml:lang="ja" descriptionType="Abstract">香味野菜類から抗酸化性を持つ有効区分を分離し,安全な食品抗酸化物を見い出す目的で実験を行った。本報では,モデル系により抗酸化性の強い種類の選択を行い,一部については濃度別の効果についても検討を加えた。使用した香味野菜類は21種,25試料ですべて生を用いた。抗酸化性は,サバ油脂肪酸に香味野菜類の抽出物を添加し,経日的に過酸化物価(POV)を測定することにより判定した。得られた結果は次の通りである。1) 80%ェタノール抽出物では,玉ネギと長ネギが初期において抗酸化性を示したが,後半急激にPOVが増加した。一方,ローズマリー,セージ,ショウガでは貯蔵中POVの上昇が抑制され,低い値であったことから,持続的な抗酸化性を持つことが示された。マジョラム,ローレル,ニンニク,オレガノではPOVの変化は上記2グループの中間的挙動を示した。ニンジンの葉,パセリ,フェンネルの葉等では逆に酸化を促進した。2) 80%エタノール抽出液で抗酸化性が認められた8試料の水抽出物について試験したところ,ショウガのみに抗酸化性が認められた。3) 玉ネギ,ショウガ,セージおよびローズマリーの含水エタノールおよびへキサン抽出物から得られた水溶区と脂溶区の濃縮物をサバ脂肪酸に1~0.02%添加して濃度別の抗酸化性を試験した。その結果,1%の添加では玉ネギの脂溶区を除くすべての試料で抗酸化性が認められたが,BHA 使用許可限度に合せた0.02%の添加では,すべての試料で抗酸化性が認められなかった。</datacite:description>
