          <datacite:description xml:lang="ja" descriptionType="Abstract">船内凍結のメバチ,キハダ,ミナミマグロのそれぞれ2魚体から,3×5×10cm(背肉,腹側肉)と2×3×5cm(腹肉)の凍結肉を切り取り,ポリェチレン包装後, -20℃, -30℃, -40℃に6ヵ月貯蔵して,その間の肉色変化を調べた。魚体の部位による色変速度については相違は認められなかった。しかし個体によって色変速度は異なり,-20℃貯蔵ではとくに個体差が明りようで,貯蔵温度が低くなるほどその差は小さくなる。そして,この包装凍結肉の保色のための貯蔵温度と期間の関係をmetMb生成率30%を限度として整理すると,-20℃貯蔵では2週間以内,-30℃では2カ月,-40℃では6ヵ月とみなされる。</datacite:description>
