| 内容記述 | Lipid-transference to the surface of the fish-body, accompaning with the reddish discoloration of the fish-oil, is caused by the oxidation and hydrolysis of the lipid catalyzed by the lipase and lipuxidase in the muścle. By the oxidation and hydrolysis, the lipids are given increasing polarity, and these properties transfer themselves to the surface as the water transition owing to muscle dehydration. | |||||
