| 内容記述 | The catch of Katakuchi-iwashi, in Seto Inland Sea, take possession of 40% in total catch of fish. Katakuchi-iwashi is not almostly sold in the fresh state, but grater part are worked up Niboshi and the small are recently worked up Mirinboshi. It is afflicted that the wet Niboshi are repeatedly corrupted in manufacturing on account of raining for few days. We protected the wet Niboshi from corruption for seven days, owing to covering with synthetic film and boiling intermittently. But the external appearance is variable as compared with Niboshi, that is sold in market. | |||||

| 内容記述 | 1. 乾燥枠に煮干イワシを入れて枠と共にビニールにより包装して外部からの細菌の侵入を断ち,間歇滅菌(即ち蒸気でむす)をほどこすことにより,煮干イワシを7日間保蔵することが出来た。2. 製品の外観は対象のものより稍々劣り,エキス分は三割減であるが市販品のものに比べると外観,品質とも差はなく,商品的価値は充分にある。 | |||||
