To enhance detection, heat was used to denature some of the water soluble proteins. The resulting TLIEF patterns were greatly simplified. The majority of the bands were removed, with only 3 and 4 major bands being present in the tiger shark and butterfly ray, respectively. The use of both heated and unheated extracts for the TLIEF separations will enhance the detection of any adulterant species present in a given surimi sample.
