This study was undertaken to comfirm the presence of low molecular weight peptides in fish muscle. Dorsal muscle of yellowfin tuna Thunnus albacares was used as sample. Water extracts of the tuna muscle from which protein was removed by several different methods were separately subjected to gel filtration on a Sephadex G25 column and the eluate was examined for the presence of peptides. No peptide except for β-alanyl dipeptides could be detected in a water extract deproteinized by trichloroacetic acid, but in that deproteinized by heating, some peptides differing in molecular weight from 2 × 10³ to 1 × 10⁴ were detected. Their amino acid composition was similar to that of parvalbumin, but differed from that in the very small content of phenylalanine. Other than these peptides, at least two kinds of peptides having much lower molecular weight were found. One of them gave mainly glycine, glutamic acid, methionine and phosphoserine (or cysteic acid) on complete hydrolysis, and the other gave chiefly glycine, aspartic acid and phosphoserine (or systeic acid).
