| 内容記述 | In Japanese dishes, "Shirasu-boshi" is usually served together with grated radish and "Kamaboko" sometimes with grated "Wasabi." Hydrogen peroxide was found in the extracts of "Kamaboko" and of "Shirasu-boshi," but was not detected or detected only in traces in the extracts of "Kamaboko" which was homogenized with "Wasabi" and in the extracts of "Shirasu-boshi" with radish. In "Wasabi" and radish, activities of catalase and/or peroxidase were found. These enzymes seemed to decompose the hydrogen peroxide contained in the "Kamaboko" and "Shirasu-boshi." | |||||
