| 内容記述 | The kind of the sample used were: Heptranchias perlo (Edoaburazame), Heterodontus japonicus (Nekozame), Mustelus manazo (Hoshizame), Squalus acanthias (Aburatunozame), Isuras glaucus (Aozame) and Mustelus griseus (Shirozame). 1) Content of urea in ordinary meat varied from 1.5 to 1.7% with fish species, and content of TMAO also varied from 0.7 to 1.3%. 2) When ordinary meat was stored at 2°C for 6 days, increase of NH₃ and TMA was negligibly low in all species. 3) When ordinary meat packed in a bottle together with water was heated at 90 or 115°C for 1 hr., decomposition rate of urea and TMAO varied with fish species and heating temperature. Thermal decomposition range of urea was 5 ~ 7% at 90℃, 15 ~ 21% at 115C and NH₃ was formed in proportion to the decomposed amount of urea. And thermal decomposition range of TMAO was 1 ~ 3% at 90°C, 5 ~ 12% at 115°C and TMA and DMA were formed in proportion to the amount of TMAO decomposed. 4) When fillet of ordinary meat of Edoaburazame was dried at 30°C for 12 hr. applying a press piling operation (anjo: 5°C, 20 hr.) in the course of drying, increase of NH₃ and TMA was negligibly low. | |||||
