| 内容記述 | To develop cheaper and safer antioxidative substance instead of synthesized ones (for example, butylated hydroxanisol : BHA), peptides hydrolyzed from cod, Gadus morhua, ordinary muscle were examined for their antioxidative effects. From the results, these peptides possessed antioxidative activity, and the activity was stronger than that of peptides prepared from casein and as strong as that of ones from soybean protein and egg albumin. The strength of the activity was in proportion to added amount, and it was very weak when peptides were added below 1 mg-N of peptides per 1 g of mackerel free fatty acids. These peptides showed strong antioxidative activity at a level of 10 mg-N of the peptides. Isolation of peptide possessing antioxidative activity was attempted by Sephadex G-25 gel filtration. The activity was found in peptide below M. W. 1.400 (bacitracin). In putting these peptides into practical use, there are a few problems : 1. These peptides are insoluble in fat. 2. They shold be added at a strength of more than 1 mg-N of peptides per 1 g of mackerel free fatty acids for antioxidative activity. 3. Addition of these peptides change the colour of the free fatty acids to brown. In spite of these problems, these peptides can be used as antioxidative substance because of their safty. | |||||
