| 内容記述 | The elimination of mercury from blue shark flesh which is usually observed to have rather high degree of mercury in the flesh was investigated to be utilized as a protein food resource. The steamed and shredded meat containing about 1 ppm of mercury was put into 2 times volume of treatment solution adjusted to pH 0.6-12 and stirred for 15 mins. The sediment obtained after centrifugation was treated again in the same way and finally rinsed with distilled water adjusted to pH 7. Reclaimed meat containing less mercury than the original material was obtained by the following extractive conditions; 1) below pH 1, 2) with SH reagents at around pH 7, and 3) with citric acid or ascorbic acid at pH 2-3. No significant effect was observed with sodium pyrophosphate, sodium sulfite, and EDTA. Thus reclaimed meat had no gel forming ability which is an important characteristic in fish paste product, but could be used as food materials in daily cooking. | |||||
