内容記述 In the previous paper, the first author reported that fish meals inducing gizzard erosion in chicks were harmless to rats. However, the effect of histidine or histamine which is suspected as toxic substance in fish meals was not examined. In the present paper, the authors tested the effect of casein diets containing histidine, histamine or histidine-G6P (D-glucose-6-phosphate) reaction product by a rat feeding experiment. The test diets were prepared as follows. Control casein diet: Casein containing buffer solution (pH 5.4) was dried at the temperature of boiling water under reduced pressure. The casein was added as protein source at 15% level to the basic test diet. Histidine diet: Casein containing histidine HCl in the above buffer solution was dried by heating it at 130°C for 3 hrs. The heated casein was added to the basic test diet at 15% level. The content of histidine HCl was 1.8g to 1 kg of the diet. Histamine diet: A diet containing 2.5g of histamine HC1 to 1 kg was prepared as in the case of the histidine diet. Melanoidine diet: Dark brown coloring substance (melanoidine) was prepared by the reaction of histidine HCI and G6P in the same buffer solution mentioned above. The histidine-G6P reaction product containing melanoidine was added to casein. The casein was dried at the temperature of boiling water under reduced pressure as in the case of control casein diet and was added to the basic test diet. Rats weighing 50-60g were divided into 4 groups. Each group of rats received any one of the diets mentioned above. After 85 days feeding, all rats were killed to be analyzed. Average growth gain, apparent protein and lipid digestibilities, and protein efficiency ratio (PER) were calculated. The weights of livers and kidneys with adrenal bodies were determined. In addition to these, pH of gastric juice and vitamin C content in kidney with adrenal body were determined to investigate the stress effect of toxic substances. The results showed no significant difference among 4 groups of rats each receiving any of the diets mentioned above. However, the weight gain of rats and vitamin C content of kidney with adrenal body were lower in the group receiving the histamine diet as compared with those in the other groups. In addition, the fluctuation of pH of gastric juice in the groups receiving histidine, histamine and melanoidine diet, were larger than that in the control group. These phenomena are supposed to show the slight toxicity of histamine to rats at the level of histamine in the present experiment.
