| 内容記述 | Recently, chitosan prepared from chitin, a component of carapace of marine crustaceans, has been recommended as food additives. Therefore, it is necessary to examine the toxicity of chitosan for human health. As dosage of 10 g of chitosan per kg of body weight was harmless to mice in the preliminary test, in the present experiment, dosages of 20, 30 and 50 g were examined. Male mice each weighing 25-28 g were divided into ten groups including the control group, each consisting of five animals. The mice in each group except the control, received diet containing chitosan or its salts. The experiment was carried out for 19 days. The results are shown in the feeding record (Table 6). The amount daily taken more than ca. 18 g of free chitosan or ca. 16 g of formate was harmful to mice. The toxicity of chitosan acetate was slightly stronger than the above two. However, these amounts are the same order as the lethal does of sugar or salt. Consequently, chitosan does not seem to be in the category of toxic substance, so far as the acute toxicity is concerned. | |||||||||||||||||||||||
