| 内容記述 | The present production amount of the wakame seaweed (Undaria pinnatifida) culture in Japan has declined by culture employee numbers decreasing and the wakame products import increasing. The processing system of salt-preserved wakame seaweed product consists of some process; such are harvesting, boiling and cooling, salting and leaf separating from stem of seaweed. The authors conducted an investigation study on an actual work of the seaweed harvesting and the salt-preserved product processing at Sanriku and Naruto areas, and focused in the labor productivity for those process. From the comparison of these case studies, it found that productivity of harvesting and salt-preserved processing was increasing with production scale for household. But productivity of leaf separating work was extremely low, because it depended entirely manuall operation, so that this process was slowest part in the salt-preserved processing system. To improve the productivity of total production system, it should be necessary that the production scale magnification and an automated production system introducing. | |||||
