| 内容記述 | Fillets of red sea bream (Pagrus major), jack mackerel (Trachurus japonicus), and common mackerel (Scomber japonicus), were stored in air, N2, and CO2 atmosphere at different temperatures and the change in their bacterial counts was investigated during storage. In fillets of red sea bream, no significant difference was noted in their bacterial counts when they were stored in air, N2, or CO2 atmosphere at 5°C during 6d storage. In contrast, in fillets of jack mackerel, after 2d storage in air at 0℃, 5℃, 10℃, and 20℃, the total aerobic counts (CFU/cm2 skin) were approximately 105, 107, 108, and 108, respectively. The corresponding values for the storage in CO2 (50% CO2, 50% N2) were 105, 105, 105, and 107. In common mackerel, after 2d storage in air at 0℃, 5℃, and 10℃, the total aerobic counts were approximately 104, 104, and 105, respectively. The corresponding values for the storage in CO2 were 104, less than 102, and 104. It was suggested that storage under carbon dioxide was effective in prolonging microbiological shelf-life. When fillet of jack mackerel and common mackerel were stored in different combination of carbon dioxide and nitrogen, the time reaching to total counts, 107 CFU/cm2, successively increased as the CO2 concentration increased. | |||||
