| 内容記述 | The dietary effect of various protein sources on the fatty acid composition of plasma lipid of rats was studied. Hypercholesterolemic diets containing 20% casein, defatted sardine meals or gluten were supplied, restrictively, to young male wister strain rats for 21 days. Cholesterol ester (CE), triglyceride (TG), and phospholipid (PL) separated from plasma lipid were analysed quantitatively and subjected to fatty acid (FA) composition analysis. The following results were obtained: Each of the meal or gluten diets remarkably lowered the plasma cholesterol levels of rats compared with the casein diet. The FA pattern of plasma CE varied with protein sources, e.g. oleic acid (C18 : 1) was lower and linoleic (C18 : 2) or arachidonic (C20 : 4) acid was higher in the meal and gluten-fed groups than in casein-fed group (control). This tendency was similar as in the case when the lipid effective in lowering the plasma cholesterol level was fed to rat. | |||||||||||
