| 内容記述 | In order to clarify nutritive value of shark viscera, two kinds of meal prepared from great blue shark viscera were given to rats and were compared with casein and soybean oil, shark meat meal and soybean oil, and casein and viscera lipids. The protein scores to casein obtained by PER were 109 for muscle meal, 98 for viscera meal, and 70 for viscera meal containing water soluble components (viscera whole meal), and they roughly agreed with the scores of 118, 96 and 76 calculated from the equation proposed in the previous study. Rather higher scores of the samples than those in the previous studies were due to better removing of water soluble components by elaborate treatments. One of the most remarkable characteristics in the amino acid composition of viscera meal and viscera whole meal was very high metionin content. The conclusion of the results from the first to the third experiments in three successive studies is that shark meat and viscera can be well utilized for animal feed in spite of slightly low nutritive value of protein. | |||||
