| 内容記述 | Frozen-thawed tuna meat is often tainted by undesirable blood spots, "shimi". Using the carp, which is easily available as live fish, the correlation between storage conditions before freezing and the occurrence of "shimi" in the belly portion of carp on thawing was determined. The occurrence of "shimi" increased gradually during three days' storage at 5°C and was found on fish stored for two days at 10°C as well. However it did not occur in fish just after killing and in fish stored for one day at 20°C. In the carp meat stored for 0, 1 and 2 days at 5℃, or 2 days at 10°C or 1 day at 20°C, the occurrence of "shimi" increased on thawing after being frozen at -60°C, especially those stored for 0 and 1 day at 5°C prior to freezing. | |||||
