| 内容記述 | In the present paper following the previous reperts I and II, the suthors describe the results of examination on chemical composition of raw frozen and boiled then frozen krill captured in the fishing seasons from 1975 to 1979. The purpose of the examination was to obtain basic information on the fluctuation of composition by season, area, size etc. Which is important for the utilization of krill as food. Krill samples were collected from Nov. 15 to Feb. 26 and the date of capture varied by years. Fishing areas also varied by years, namely the areas were rather wide in the 1975/76 and 1976/77 seasons and were limited in the 1977/78 and 1978/79 seasons. The results obtained were as follows. 1) The size of krill captured in the 1976/77, 1977/78 and 1978/79 seasons was small in the beginning and the end of the seasons and was large in the middle. The size of krill in the 1975/76 seasons was generally small compared with the other seasons mentioned above. No relation between the size or fatness and the chemical composition was observed. 2) By proximate analyses of krill samples, moisture, crude protein, crude fat and crude ash of raw frozen krill were 73-83%, 13-18%, 1-7% and 2.5-3.4%, respectively and those of boiled then frozen krill were 74-82%, 11-17%, 2-9% and 2.8- 5.1%, respectively. These values were at a similar level to hitherto reported values. The relation between moisture and crude fat content was examined, but a significant relation was not obtained. However, there was a tendency for an increase of crude fat to wards the end of the season. 3) Emission spectroscopy of minerals in the parts of krill body, showed that calcium was abundant in carapace and little in cephalothrax with viscera and tail meat, and copper was distributed rather evenly in each part. 4) Chitin content in raw frozen krill was 2.3-3.0% on dry basis. These values were at a similar level to hitherto reported chitin levels for crustaceans. | |||||

| 内容記述 | 1報および2報にひきつづき,オキアミの食用化のための基礎資料を得る目的で,昭和50~54年度に漁獲された試料について,生凍結品,煮熟凍結品を用いて漁場別,漁期別に一般成分の分析を行った。1) オキアミ試料の採集は全年度を通じれば11月15日~2月26日であり,年度により多少相違があった。それは50/51年度,51/52年度は比較的広い海域で操業しているのに対し,52/53年度,53/54年度は操業海域が比較的狭かったことと関係がある。2) 51/52,52/53,53/54年度に漁獲されたオキアミの魚体は漁期の初めと終りで小型,中間で大型であった。また50/51,53/54年度の魚体は他の年度と較べて全般に小型であった。このように魚体の大小,肥疫は漁場や操業形態,漁期などによって変動することが示された。なお,魚体の大小と成分との問には必ずしも有意の関係は認められなかった。3) 各年度別漁獲物の一般成分の分析結果では,生凍結品で,水分 73~83%,粗たん白13~18%,粗脂肪1~7%,粗灰分2.5~3.4%,煮熟凍結品で水分 74~82%,粗たん白11~17%,粗脂肪 2~9%,粗灰分2.8~5.1%であった。また水分と粗脂肪の関係は,他の要因が大きく影響し一定の傾向はみい出されなかった。しかし,粗脂肪含量については,漁期の終期になるに従い常に増加傾向が顕著であった。4) オキアミの部位による無機成分の分析を発光分析法により調べた結果,Ca は殻部に多く,頭胸部肉部では少なかった。Cu の場合は部分による差異は少なかった。ただし輝線の強度を直接記録する発光分折法には多少問題がある。5) キチン含量は2.3~3.0%であった。 | |||||
