内容記述 | Free ninhydrin reactive substances (FNRS) in the white muscle, dark muscle and liver of bluefin tuna cultured for long term (about 3 years) and short term (about 3.5 months) were compared. The total contents of these FNRS (mg/100 g dried tissue) from the large fish (cultured for 3 years) were remarkably lower in the liver and slightly lower in the white and dark muscle than those in the corresponding tissue from the small fish (cultured for only 3.5 months). However, based on the unit weight of crude protein (mg/g protein) those differences became less and the opposite result was obtained in case of the white muscle. Dominant substances in each tissue were almost the same in both large and small fish, but histidine levels in the white and dark muscles of the large fish were significantly lower than those of the small fish. On the other hand, lysine levels of the former were at least two-hold higher than those of the latter. Anserine was detected only in the muscles (both white and dark) of the large fish at a level of more than 1% of total FNRS. | |||||||||||||
